Surprise Your Friends with this Melon Risotto Recipe
When it comes to comfort food, risotto takes the crown. But what if we told you that this classic dish could be elevated to a whole new level by the addition of sweet, juicy melon? Prepare to be amazed by our Melon Risotto Recipe – a symphony of creamy textures, delicate flavors, and some summertime sweetness. In this article, we’ll guide you through crafting this extraordinary dish that’s bound to steal the spotlight at your next dinner party.
We stumbled upon this delicious variation on the standard Risotto at Restaurant Grassilli in Bologna, during our summer road trip through the northern parts of Italy. We were blown away by the flavor combination. We asked the waiter for some tips on how to prepare this dish at home.
So here it is: our version of Melon Risotto. We have already made it twice at home and both times we were once again blown away by the smoothness and sweetness of the melon combined with the saltiness of the cheese and risotto. We definitely recommend you making this yourself. It is not difficult at all. We love sharing easy and (rather) quick recipes to make at home. Let’s get started.

What about Risotto?
Before we delve into the risotto recipe, let’s take a moment to appreciate the storied history of risotto. Hailing from Northern Italy, particularly the Lombardy and Piedmont regions, risotto is a dish with roots that stretch back centuries. Originally, rice was a luxury ingredient brought to Italy from Asia, and its preparation as risotto became a culinary art form. By carefully toasting the rice in butter or oil and slowly adding liquid while stirring, Italians perfected the technique that yields the beloved creamy consistency we know today.
Using the right type of rice is a fundamental aspect of crafting a perfect risotto. Risotto rice, such as Arborio or Carnaroli, boasts a distinct starch composition that contributes to the dish’s creamy consistency. These grains have a higher level of starch, which is released during cooking, creating the sought-after velvety texture.
Unlike regular rice, which tends to become overly soft or sticky, risotto rice maintains its structure while releasing just enough starch to bind the dish together harmoniously. This unique property ensures that each grain of risotto rice absorbs flavors evenly. It is all about using the right rice for the right purpose.
Distinguishing between risotto rice and regular rice is surprisingly simple when focusing on their visual characteristics. Risotto rice showcases short, plump grains that appear almost round. These grains stand apart from the elongated, slender structure of regular rice.

Melon Risotto Recipe
This is all you need for two portions of the amazing Melon Risotto Recipe.
- 200 grams (1 cup) Risotto Rice
- 1 small (red) onion, finely chopped
- 2 cloves garlic, minced
- 1 Liter (4 cups) vegetable stock, kept warm
- 120 ml (½ cup) white wine
- 2 tablespoons butter (30 gr)
- 50 gr (½ cup) grated Parmesan (or Pecorino) cheese
- half a sweet melon, finely chopped (such as cantaloupe or honeydew)
- Fresh parsley, chopped, for garnish
- Salt and pepper to taste

How to Make the Melon Risotto?
- Sauté the Aromatics: In a wide, heavy-bottomed pan, melt a tablespoon of butter over medium heat. Add the finely chopped onion and minced garlic, sautéing until the onion turns translucent and the garlic is fragrant.
- Toast the Rice: Add the risotto rice to the pan and cook, stirring continuously, until the rice grains turn translucent around the edges. This toasting step enhances the rice’s flavor and ensures it will absorb the creamy goodness to come.
- Adding the White Wine: Pour in the white wine and stir until it’s absorbed by the rice. The wine adds a layer of depth to the dish, infusing it with a subtle acidity.
- Ladle by Ladle: Begin the risotto ritual by adding a ladleful of warm vegetable stock to the rice. Stir gently until the liquid is mostly absorbed. Continue this process, adding ladles of stock and stirring, until the rice is tender and creamy. This will take about 15 to 20 minutes. I have to admit I mostly poor in half of the stock at the beginning. Let it simmer for about 10 minutes and then add in the rest. But you have to stay close and stir every now and then.

5. Creamy Finish: As the rice reaches its desired creamy consistency, stir in the remaining tablespoon of butter and the grated Parmesan cheese. This creates the signature luxurious texture of risotto. Before adding this, make sure to taste if the rice has properly softened. If it is still too hard, then wait a bit longer. (if needed, add a bit more stock) It should never become a soup, so be careful not to add too much liquid.

6. Melon Infusion: Just before serving, gently fold in the finely chopped sweet melon. The melon’s natural sweetness adds a refreshing twist to the dish, balancing the richness of the risotto. Keep some bits of melon to use as a topping.

7. Garnish and Serve: Plate the melon-infused risotto and sprinkle it with chopped fresh parsley and some leftover bits of melon. This final touch not only adds a burst of color but also a touch of freshness.
